Anchor text is a clickable text in a hyperlink. Anchor text should be a relevant main keyword that describes the page it is linking to. Google's original algorithm states that :

Consider an example : In a tutorial, "How to calculate BMI?", you are linking to a Calculator page to find BMI.
It is best to use "BMI Calculator" as anchor text than to simply mention, "To find BMI, Click Here".

Anchor text has now lost importance than before but still, it is a strong relevancy signal up to an extent.
